I don't really know what triggers this; I've got a number of otherwise identical systems which don't have this problem, but I literally ran zpool status and the machine panic'd.
The captured console buffer I've got is attached; since the dump device is driven by the panicking driver, I'm not surprised it's hung instead of successfully dumping core.
Passing -k on next boot, this should be helpful next time it goes down in a flaming heap.

On reboot, the panic is not easily reproducible, but the output of zpool status has changed to "DEGRADED" and dropped a disk, prompting me to think that it's a disk failing and not being handled correctly, somehow.
Sadly, not being immediately reproducible means that I can't include the dump.
